Ingredients
- 3 pounds Chicken Breasts
- 12 Double Saltines No other brand will work!
- 1/2 tsp Dried Tarragon Flakes
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/2 cup Butter or Margarine
- 1/4 cup Onion Finely chopped
- 4 ounces Sliced Mushrooms Drained
- 1/2 cup Dry White Wine
- 1/2 cup Chicen Broth
- 1 cup Seedless White Grapes Split

Instructions

Place saltines between two sheets of waxed paper. With a rolling pin, crush very fine

Add salt, pepper and tarragon to the crumbs

Moisten the chicken breasts and dip in crumb mixture

Refrigerate for about 15 minutes to let crumbs set

In a skillet melt the margarine

Lightly brown chicken on each side and remove to sallow baking dish, placing the chicken in one layer only

To the margarine remaining in the skillet add the chopped onion, saute until soft, add mushrooms, chicken broth and white wine. Pour over chicken.

Bake in oven at 375 for 35 minutes

Remove from oven, add the sliced grapes and bake for an additional 10 mintues
